After training in Sydney and working at restaurants across Europe, Emma returned to Melbourne in 2019 with a vision: to create a dining experience that honors the farmers, fishermen, and artisans who supply the best ingredients Victoria has to offer.

"I don't need exotic ingredients shipped from overseas. What grows here, what's caught off our coast, what's raised on our farms—that's more than enough to create something extraordinary."
