Sunrise
Yirgacheffe — Ethiopia
Bright. Floral. Jasmine and blueberry on the front, a long honeyed finish. Brews bright on a V60 or Aeropress.
Small batches. Big intent. Coffee from the people who actually roast it — three blocks from where you're standing.
We source directly from farmers in Ethiopia, Colombia and Brazil. Long-term relationships, real prices, paid above market. The beans land in Brunswick green, get roasted on a 15kg Probat the same week, and ship the day they're bagged.
No third-party brokers. No marketing department. No carefully arranged dripper photoshoots. Just one warehouse, two roasters, and the kind of obsession that makes you re-cup a batch six times before it goes out.

Huila — Colombia
Deep, smoky, low-acid. Cocoa nib and pipe tobacco. For French press, moka pot, or anyone who likes a coffee that punches back.
We buy unblended green from farms in Ethiopia, Colombia and Brazil. Fixed long-term contracts at fair-trade-plus prices. We know the names of the people who grew it.
15-kilo batches on a Probat UG-15. Profiles tuned per origin, cupped after every roast, retasted at day 4 and day 14. Nothing leaves the warehouse without sign-off.
Roasted Monday and Thursday. Bagged the same day. Posted that afternoon. In your grinder within 48 hours, anywhere in Australia. That's the entire chain.
We started Brunswick Roasters because every cafe in town was buying from the same three wholesalers. We wanted the opposite of that.— Tom Healey, head roaster
